Rooibos is a heritage plant unique to the Cederberg region of South Africa and is celebrated for its health properties.

Ingredients

  • 3 large eggs
  • 1.5 cups vegetable oil
  • 2 cups white sugar
  • 2 cups cake flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 3 cups finely grated carrots
  • 0.5 cup strong brewed Rooibos tea

Method

    Preheat oven to 180C and grease a cake tin.

    Beat eggs, oil, and sugar together until light.

  3. 3

    Mix in the brewed Rooibos tea.

  4. 4

    Sift and fold in dry ingredients.

    Add carrots and mix well.

    Bake for 45 minutes or until a skewer comes out clean.
